Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Coconut oil, solid but not hard
  • 0.75 cup Unsweetened almond milk
  • 1 tablespoon Maple syrup
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined.

Step 3

Add the solid coconut oil to the dry ingredients. Using a pastry cutter or your fingers, cut the coconut oil into the flour mixture until it resembles coarse crumbs.

Step 4

In a small bowl, mix together the almond milk, maple syrup, and vanilla extract.

Step 5

Pour the wet ingredients into the dry ingredients and gently stir until the mixture starts to come together. Avoid overmixing to ensure the biscuits are tender.

Step 6

Turn the dough out onto a lightly floured surface and knead gently a few times until smooth, adding a small amount of flour if the dough is too sticky.

Step 7

Roll the dough out to about 3/4 inch thickness. Use a round cookie cutter (about 2 inches in diameter) to cut out biscuits.

Step 8

Place the biscuits onto the prepared baking sheet, leaving a little space between each.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the biscuits are golden brown on top.

Step 10

Remove from the oven and allow to cool slightly on a wire rack before serving. Enjoy your dairy-free tea biscuits warm.
