  • 3 medium Carrots, sliced
  • 2 units Celery stalks, diced
  • 2 tablespoons Tomato paste
  • 3 cups Chicken broth
  • 2 units Bay leaves
  • 1 teaspoon Thyme, dried
  • 0.5 teaspoon Rosemary, dried
  • 2 tablespoons Parsley, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

Season the chicken thighs with salt and black pepper evenly on both sides.

Step 2

Heat the olive oil in a large pot over medium-high heat. Add the chicken thighs, skin side down, and sear for about 5-7 minutes until golden brown. Flip and sear the other side for an additional 4-5 minutes. Remove the chicken from the pot and set aside.

In the same pot, add the minced garlic and diced onions. Sauté for about 3-4 minutes until the onions are translucent.

Add the sliced carrots and diced celery, and cook for another 5 minutes until they begin to soften.
