Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds beef chuck, diced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 teaspoon thyme, dried
  • 1 sheet dairy-free puff pastry
  • 2 tablespoons non-dairy milk

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef chunks with salt and pepper. Working in batches, add the beef to the pot and brown on all sides, about 5 minutes per batch. Transfer the browned meat to a plate.

Step 2

In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are softened. Stir in the minced garlic and cook for another minute.

Sprinkle the flour over the vegetables and stir to combine, cooking for 2 minutes to cook out the raw flour taste.

Gradually stir in the beef broth and scrape up any browned bits from the bottom of the pot. Add the browned beef back to the pot along with the tomato paste, bay leaf, and thyme.
