Ingredients

  • 6 cups yellow squash
  • 2 tablespoons olive oil
  • 1 medium, chopped yellow onion
  • 3 cloves, minced garlic
  • 1 cup dairy-free mayonnaise
  • 1 cup dairy-free shredded cheese
  • 2 tablespoons nutritional yeast
  • 1 cup gluten-free breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Slice the yellow squash into 1/4-inch rounds. Steam them for about 5-7 minutes until just tender. Drain and set aside.

Step 3

In a medium skillet over medium heat, heat the olive oil. Add the chopped onion and cook until translucent, about 5 minutes.

Add minced garlic to the skillet, stir and cook for another 1-2 minutes until fragrant.
