Ingredients

  • 2 cups All-purpose flour
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Coconut oil, solid
  • 0.75 cups Warm water
  • 4 cups Vegetable oil (high heat, for frying)
  • 0.25 cup Honey (optional, for serving)

Directions

Step 1

In a large mixing bowl, sift together the all-purpose flour, baking powder, and salt.

Step 2

Using a pastry cutter or your fingers, cut the solid coconut oil into the flour mixture until it resembles coarse crumbs.

Step 3

Gradually add the warm water to the flour mixture, stirring with a fork or spatula until a dough forms.

Step 4

Turn the dough out onto a lightly floured surface and knead it gently until smooth, about 2-3 minutes.

Step 5

Cover the dough with a clean kitchen towel and let it rest for 20 minutes.

Step 6

After resting, roll out the dough to about 1/8 inch thick using a rolling pin. Cut the dough into 3-inch squares or triangles.

Step 7

In a large pot or deep pan, heat the vegetable oil to 375°F (190°C). Make sure there is enough oil to fully submerge the sopapillas.

Carefully add a few dough pieces at a time to the hot oil, frying them for about 1-2 minutes on each side, or until they are golden brown and puffed.

Using a slotted spoon, remove the fried sopapillas from the oil and place them on a paper towel-lined plate to drain any excess oil.
