Ingredients

  • 4 large Russet potatoes
  • 1 medium Yellow onion
  • 2 large Eggs
  • 3 tablespoons All-purpose flour
  • 1 teaspoon Baking powder
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Olive oil

Directions

Step 1

Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a bowl of cold water to prevent browning.

Step 2

Peel and grate the onion. If preferred, you can also finely chop the onion.

Step 3

In a large mixing bowl, beat the eggs and add the flour, baking powder, salt, and black pepper. Whisk to combine.

Drain the grated potatoes and use a clean kitchen towel or cheesecloth to squeeze out as much moisture as possible from the potatoes and onion.
