Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a bowl of cold water to prevent browning.
Peel and grate the onion. If preferred, you can also finely chop the onion.
In a large mixing bowl, beat the eggs and add the flour, baking powder, salt, and black pepper. Whisk to combine.
Drain the grated potatoes and use a clean kitchen towel or cheesecloth to squeeze out as much moisture as possible from the potatoes and onion.
Add the dry potatoes and onion to the egg mixture, stirring until fully combined.
In a large skillet over medium-high heat, pour enough olive oil to coat the bottom of the pan, approximately 0.5 cup.
Once the oil is hot (but not smoking), carefully drop heaping tablespoons of the potato mixture into the pan, pressing down gently to flatten.
Fry the latkes for 3-4 minutes on each side, or until they are golden brown and crispy. Be careful not to overcrowd the pan.
Transfer cooked latkes to a plate lined with paper towels to drain excess oil.
Continue the process until all batter is used, adding more oil as needed and allowing it to heat properly before adding more latkes.
Serve warm and enjoy as is or with your favorite toppings such as applesauce or dairy-free sour cream.
