Ingredients

  • 4 large Yukon Gold potatoes
  • 2 tablespoons Olive oil
  • 2 Garlic cloves
  • 2 cups Vegetable broth
  • 1 cup Coconut milk
  • 3 tablespoons Nutritional yeast
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.125 teaspoon Ground nutmeg
  • 2 tablespoons Chopped chives

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Peel the Yukon Gold potatoes and slice them thinly, about 1/8 inch thick. A mandoline slicer can help in getting even slices.

Step 3

Mince the garlic cloves finely.

Step 4

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the vegetable broth and coconut milk to the saucepan. Stir in the nutritional yeast, fresh thyme leaves, salt, black pepper, and nutmeg.
