  • 1 teaspoon Dijon mustard
  • 100 grams All-purpose flour
  • 2 large Eggs, beaten
  • 150 grams Panko breadcrumbs
  • 500 milliliters Vegetable oil

Directions

Step 1

Peel and chop the russet potatoes into even-sized chunks. Place them in a pot of cold water and bring to a boil. Cook until tender, about 15 minutes.

Step 2

Drain the potatoes and return them to the pot. Mash them until smooth and let them cool slightly.

Step 3

In a mixing bowl, combine the mashed potatoes, diced ham, chopped green onions, olive oil, fresh parsley, salt, black pepper, and Dijon mustard. Mix well.
