Ingredients

  • 4 whole ripe but firm pears
  • 4 cups water
  • 1 cup sugar
  • 1 whole vanilla bean
  • 1 whole cinnamon stick
  • 4 whole cloves
  • 1 whole lemon
  • 1 whole orange

Directions

Step 1

Peel the pears, leaving the stems intact. Slice a thin layer off the bottom of each pear to allow them to stand upright if desired.

Step 2

In a large saucepan, combine the water and sugar. Stir to dissolve the sugar over medium heat.

Step 3

Split the vanilla bean lengthwise and scrape out the seeds. Add both the seeds and the pod to the saucepan.

Step 4

Add the cinnamon stick, cloves, zest of the lemon and orange (use a vegetable peeler to avoid the bitter white pith) into the saucepan.

Bring the poaching liquid to a simmer and allow it to boil gently for 5 minutes to let the flavors infuse.

Add the pears to the liquid, ensuring they are fully submerged. You may place a small heatproof plate on top of the pears to keep them submerged, if necessary.

Poach the pears for 25-30 minutes until they are tender when pierced with a fork. Turn the pears occasionally to ensure even cooking.

Remove the pears from the poaching liquid and set aside to cool.

Continue to simmer the poaching liquid until it reduces to a syrupy consistency, approximately 10-15 additional minutes.
