  • 4 pieces sourdough bread slices
  • 4 tablespoons vegan pesto sauce
  • 4 slices vegan mozzarella cheese
  • 8 slices grilled eggplant
  • 8 slices grilled zucchini
  • 1 whole roasted red bell pepper
  • 1 cup fresh spinach leaves
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat a panini press or a grill pan over medium heat.

Step 2

Brush the eggplant and zucchini slices with olive oil and season with salt and pepper.

Step 3

Grill the eggplant and zucchini slices for about 3 minutes on each side until they have nice grill marks and are tender.

Slice the roasted red bell pepper into strips.
