  • 500 grams All-purpose flour
  • 10 grams Active dry yeast
  • 100 grams Granulated sugar
  • 1 teaspoon Salt
  • 240 milliliters Unsweetened almond milk
  • 4 large Egg yolks
  • 2 teaspoons Vanilla extract
  • 1 tablespoon Orange zest
  • 1 tablespoon Lemon zest
  • 100 grams Raisins
  • 100 grams Candied citrus peel
  • 50 grams Pistachios
  • 100 grams Coconut oil

Directions

Step 1

In a small bowl, dissolve the yeast in 60 ml of warm almond milk and let it sit for 10 minutes until frothy.

Step 2

In a large mixing bowl, combine the flour, sugar, and salt. Mix well.

Step 3

Add the yeast mixture to the flour mixture along with the remaining almond milk, egg yolks, vanilla extract, orange zest, and lemon zest.

Mix the ingredients until a smooth dough forms. Knead the dough on a floured surface for about 10 minutes until it becomes elastic and smooth.

Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 2 hours or until doubled in size.

Incorporate the raisins, candied citrus peel, and pistachios into the risen dough, kneading gently to distribute them evenly.

Melt the coconut oil and let it cool slightly. Gradually add the melted coconut oil into the dough, kneading until fully absorbed.

Place the panettone in the preheated oven and bake for 35-40 minutes until golden brown and a skewer inserted into the center comes out clean.

Remove from the oven and let the panettone cool completely on a wire rack before slicing and serving.
