Ingredients

  • 16 oz fresh oysters with their liquid
  • 1 cup unsweetened coconut milk
  • 1 cup vegetable broth
  • 2 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 2 celery stalks, finely chopped
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 tsp fresh thyme leaves
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 2 scallions, chopped
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Drain the oysters, reserving their liquid, and set them aside. Strain the oyster liquid to remove any shell fragments.

Step 2

In a large saucepan over medium heat, add the olive oil. Once hot, sauté the chopped onion and celery until the onion is translucent, about 5 minutes.

Stir in the minced garlic and cook for another minute until fragrant.

Add the reserved oyster liquid, coconut milk, vegetable broth, bay leaf, thyme, sea salt, and black pepper to the saucepan. Stir to combine.
