Ingredients

  • 3 cups, chopped and drained Clams
  • 2 cups Clam juice
  • 2 cups Water
  • 3 medium, peeled and diced Potatoes
  • 4 slices, chopped Bacon
  • 1 large, chopped Yellow onion
  • 2 stalks, diced Celery
  • 3 cloves, minced Garlic
  • 2 tablespoons Olive oil
  • 1 teaspoon, dried Thyme
  • 1 Bay leaf
  • 1 cup Coconut cream
  • 1 cup Silk unsweetened cashew milk
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside on a paper towel-lined plate.

Step 2

In the same pot, add olive oil and sauté the chopped onion, celery, and garlic until the onion is translucent, about 5 minutes.
