Ingredients

  • 1.5 pounds ground beef
  • 0.5 pounds ground pork
  • 1 medium onion
  • 3 garlic cloves
  • 1 cup gluten-free breadcrumbs
  • 0.5 cup unsweetened almond milk
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 0.5 cup ketchup
  • 0.25 cup fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 cup ketchup for glaze
  • 2 tablespoons brown sugar
  • 1 teaspoon apple cider vinegar

Directions

Step 1

Preheat your oven to 350°F (175°C) and prepare a loaf pan by lightly greasing it or lining it with parchment paper.

Step 2

Finely dice the onion and garlic cloves. Chop the fresh parsley.

Step 3

In a small bowl, combine the unsweetened almond milk and gluten-free breadcrumbs. Let the mixture sit for a few minutes until the breadcrumbs are fully absorbed and soft.

Step 4

In a large mixing bowl, combine the ground beef, ground pork, diced onion, garlic, eggs, Worcestershire sauce, Dijon mustard, ketchup, parsley, salt, and pepper. Add in the breadcrumb mixture and gently mix until all ingredients are well incorporated. Be careful not to overmix to ensure a tender loaf.

Step 5

Transfer the meat mixture into the prepared loaf pan, pressing it down gently to fill the pan evenly.

Step 6

In a separate small bowl, mix together the additional 0.5 cup of ketchup, brown sugar, and apple cider vinegar to prepare the glaze.

Step 7

Spread the glaze evenly over the top of the meatloaf.

Step 8

Place the loaf pan in the preheated oven and bake for approximately 60 minutes, or until the internal temperature reaches 160°F (71°C).

Step 9

Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing and serving.

Step 10

Serve the meatloaf hot with your favorite sides. Enjoy your delicious dairy-free classic meatloaf!
