Ingredients

  • 500 grams ground beef
  • 250 grams ground pork
  • 1 cup brown rice breadcrumbs
  • 1 cup unsweetened almond milk
  • 1 whole large egg
  • 1 medium onion, finely chopped
  • 2 whole garlic cloves, minced
  • 0.5 cup fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 800 grams crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon sugar

Directions

Step 1

In a small bowl, combine brown rice breadcrumbs and unsweetened almond milk. Allow to soak for 5 minutes.

Step 2

In a large bowl, mix together the ground beef, ground pork, soaked breadcrumbs, egg, onion, garlic, parsley, salt, and black pepper until just combined. Avoid over-mixing.

Step 3

Shape the mixture into approximately 16 meatballs, about 1 1/2 inches in diameter.

Step 4

Heat olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides, about 6-8 minutes. Transfer the meatballs to a plate and set aside.

Step 5

In the same skillet, add the crushed tomatoes, oregano, basil, and sugar. Stir to combine and bring the sauce to a gentle simmer.

Step 6

Return the meatballs to the skillet, nestling them into the tomato sauce.

Step 7

Cover and let simmer on low heat for 25-30 minutes, allowing the meatballs to cook through and absorb the flavors of the sauce.

Step 8

Taste the sauce and adjust seasoning if necessary. Serve the meatballs hot, garnished with additional chopped parsley if desired.
