Ingredients

  • 500 grams Ground beef
  • 1 cup Breadcrumbs
  • 0.25 cup Unsweetened almond milk
  • 1 large Egg
  • 1 small Onion
  • 2 cloves Garlic cloves
  • 0.25 cup Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 cups Tomato sauce
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 2 large Baguette or sub rolls
  • 0.25 cup Fresh basil leaves

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the ground beef, breadcrumbs, unsweetened almond milk, egg, finely chopped onion, minced garlic, chopped fresh parsley, salt, and black pepper.

Step 3

Mix the ingredients by hand until just combined, being careful not to overwork the mixture to avoid tough meatballs.

Step 4

Shape the mixture into meatballs approximately 1.5 inches in diameter and place them on a baking sheet lined with parchment paper.

Step 5

Heat olive oil in a large skillet over medium heat and add the meatballs. Cook until browned on all sides, around 5-7 minutes.

Step 6

Transfer the browned meatballs back to the baking sheet and bake in the preheated oven for 10 minutes to ensure they are cooked through.

Step 7

While the meatballs bake, use the same skillet to heat the tomato sauce over medium heat. Stir in the Italian seasoning and crushed red pepper flakes (if using).

Step 8

Add the baked meatballs to the tomato sauce and simmer for an additional 5-10 minutes.

Step 9

Slice the baguette or sub rolls in half lengthwise and lightly toast in the oven for 3-4 minutes.

Step 10

Spoon the meatballs and sauce onto the toasted bread.

Step 11

Garnish with fresh basil leaves before serving.
