  • 2 pounds Yukon Gold potatoes
  • 1 cup Vegetable broth
  • 1 tablespoon Olive oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh chives, chopped

Directions

Step 1

Peel and cut the potatoes into even-sized chunks, approximately 1-2 inches each.
