Warm the almond milk to 37-40°C (98.6-104°F) and pour it into a large mixing bowl.
Sprinkle the active dry yeast over the warm milk and add 1 tablespoon of the sugar. Let it sit for about 5-10 minutes until foamy.
In a separate bowl, combine the flour, remaining sugar, salt, and nutmeg.
Add the coconut oil, beaten eggs, and vanilla extract to the yeast mixture. Stir until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a soft, sticky dough forms.
Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic.
Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
Once risen, punch down the dough and roll it out on a floured surface to about 1 cm thickness.

Heat the vegetable oil in a large, deep pan to 180°C (350°F).
