Ingredients

  • 1 cup Basmati rice
  • 3 cups Coconut milk
  • 1 cup Almond milk
  • 0.5 cup Sugar
  • 5 pods Green cardamom pods
  • 0.5 teaspoon Saffron strands
  • 2 tablespoons Raisins
  • 2 tablespoons Cashew nuts
  • 2 tablespoons Almonds
  • 2 tablespoons Pistachios
  • 1 teaspoon Rose water
  • 1 pinch Salt

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Step 2

In a heavy-bottomed pan, combine the coconut milk and almond milk and bring to a gentle boil over medium heat.

Step 3

Once the milk starts to boil, reduce the heat to low and add the washed rice, stirring occasionally to prevent sticking.

Step 4

Crush the cardamom pods slightly and add them to the mixture along with the saffron strands.

Step 5

Allow the rice to cook slowly, stirring occasionally, for about 25-30 minutes or until the rice is soft and the mixture is thick and creamy.

Step 6

Stir in the sugar and a pinch of salt until completely dissolved, cooking for another 5 minutes.

Step 7

In a small pan, toast the cashew nuts, almonds, and pistachios over low heat until they are golden brown.

Step 8

Add the toasted nuts and raisins to the kheer, mixing well.

Step 9

Stir in the rose water and let the kheer simmer for an additional 2 minutes.

Step 10

Remove from heat, discard the cardamom pods, and let cool slightly. Serve warm or chilled.
