Ingredients

  • 4 cups Almond milk
  • 1 cup Coconut milk
  • 5 large Egg yolks
  • 0.5 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground nutmeg
  • 0.5 teaspoon Ground cinnamon
  • 0.125 teaspoon Clove powder
  • 0.25 teaspoon Salt
  • 0.5 cup Rum or bourbon (optional)

Directions

Step 1

In a medium saucepan, combine almond milk and coconut milk. Warm over medium heat until hot but not boiling, stirring occasionally.

Step 2

In a mixing bowl, whisk together egg yolks, granulated sugar, and salt until the mixture is smooth and has a pale yellow color.

Step 3

Gradually add about 1/4 cup of the hot milk mixture to the egg yolks, whisking constantly to temper the yolks and prevent them from curdling.

Step 4

Slowly whisk the tempered yolk mixture back into the saucepan with the remaining hot milk.

Step 5

Cook over medium heat, stirring constantly with a wooden spoon for about 5-7 minutes, or until the mixture thickens slightly and coats the back of the spoon. Do not let it boil.

Remove the saucepan from the heat. Stir in vanilla extract, ground nutmeg, ground cinnamon, and clove powder.
