  • 2 tablespoons Water

Directions

Step 1

Start by preparing a double boiler. Fill a medium saucepan with about 1 inch of water and bring it to a simmer over medium heat. Do not let it come to a boil.

In a medium-sized heatproof bowl, whisk together the egg yolks, lemon juice, Dijon mustard, sea salt, and cayenne pepper until well blended.

Place the bowl over the simmering water, making sure the bottom of the bowl does not touch the water. Constantly whisk the mixture for about 2-3 minutes until it begins to thicken.
