Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 pound ground beef
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 15-ounce can canned black beans, rinsed and drained
  • 2 cups cooked white or brown rice
  • 8 large flour tortillas
  • 2 avocados, sliced
  • 1 cup salsa
  • 0.5 cup fresh cilantro, chopped
  • 2 lime wedges

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 3-4 minutes.

Step 3

Increase the heat to medium-high and add the ground beef to the skillet. Brown the beef, breaking it apart with a spatula, until it's cooked through and no longer pink, about 7-8 minutes.

Step 4

Drain excess fat from the skillet, if necessary.

Step 5

Lower the heat to medium and stir in the cumin, chili powder, paprika, dried oregano, salt, and black pepper. Cook for an additional 2 minutes to allow the spices to bloom.

Step 6

Add the black beans to the skillet. Stir to combine and cook for 3-4 minutes until the beans are heated through.

Step 7

Warm the flour tortillas by placing them on a dry skillet over low heat or wrapping them in foil and placing them in a preheated oven at 350°F (175°C) for about 5 minutes.

Step 8

To assemble the burritos, lay a warm tortilla flat on a clean surface. Spoon about 1/4 cup of cooked rice in a line down the center of the tortilla.

Step 9

Add a generous scoop of the beef and bean mixture over the rice.

Step 10

Top with sliced avocados, a spoonful of salsa, and a sprinkle of fresh cilantro.

Step 11

Fold the sides of the tortilla over the filling, then roll from one end to the other to create a burrito.

Step 12

Repeat the assembly process with the remaining tortillas and filling.

Step 13

Serve the burritos with lime wedges on the side for squeezing over the top before eating.
