Ingredients

  • 300 g mixed dried fruit
  • 250 ml strong black tea
  • 150 g light brown sugar
  • 250 g plain flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp ground allspice
  • 125 g unsweetened applesauce
  • 1 tsp vanilla extract
  • 0.5 tsp salt

Directions

Step 1

Place the mixed dried fruit in a large bowl and pour over the strong black tea. Leave it to soak for at least 1 hour, or overnight, allowing the fruit to plump up.

Step 2

Preheat your oven to 175°C (350°F). Grease and line a standard loaf tin with parchment paper.

Step 3

In another bowl, mix together the light brown sugar, plain flour, baking powder, ground cinnamon, ground nutmeg, ground allspice, and salt.

Add the unsweetened applesauce and vanilla extract to the soaked and swollen fruit, stirring well to combine.
