Ingredients

  • 120 grams all-purpose flour
  • 1 teaspoon baking powder
  • 100 grams granulated sugar
  • 2 large eggs

  • 1 teaspoon lemon zest
  • 40 milliliters unsweetened almond milk
  • 85 grams coconut oil
  • 1 pinch of salt
  • 2 tablespoons powdered sugar for dusting

Directions

Step 1

In a small saucepan, melt the coconut oil over low heat, then set aside to cool to room temperature.

Step 2

In a medium-sized mixing bowl, add the all-purpose flour, baking powder, and pinch of salt, then whisk together to combine.

Step 3

In a separate large bowl, beat the eggs and granulated sugar together using an electric hand mixer on high speed, until the mixture becomes thick, pale, and ribbon-like.

Stir in the vanilla extract and lemon zest into the egg mixture.
