Ingredients

  • 900 grams Powdered Sugar
  • 2 teaspoons Agar Agar Powder
  • 125 milliliters Cold Water
  • 120 grams Liquid Glucose
  • 60 grams Vegetable Shortening
  • 2 teaspoons Vanilla Extract

Directions

Step 1

Sift the powdered sugar into a large mixing bowl, making sure there are no lumps present.

Step 2

In a small saucepan, combine the agar agar powder and half of the cold water. Allow it to sit for 5 minutes to hydrate.

Step 3

Place the saucepan over low heat and stir until the agar agar dissolves completely and starts to boil slightly, approximately 2-3 minutes.

Step 4

Add the remaining water, liquid glucose, and vegetable shortening to the saucepan. Stir continually over low heat until the mixture is completely smooth and all the ingredients are melted and combined, approximately 5 more minutes.

Step 5

Remove the pan from the heat and stir in the vanilla extract.

Step 6

Make a well in the center of the powdered sugar and pour in the hot liquid mixture.

Step 7

Using a wooden spoon or a spatula, mix the powdered sugar and liquids together. As it begins to come together, turn it out onto a surface dusted with powdered sugar.

Knead the fondant on the dusted surface until it is smooth and pliable, adding more powdered sugar if necessary to prevent sticking.

Wrap the fondant tightly in plastic wrap and let it rest at room temperature for at least an hour before using.
