Ingredients

  • 6 pieces ripe saba bananas (or plantains)
  • 1 cup canned jackfruit
  • 1 cup brown sugar
  • 12 pieces spring roll wrappers
  • 2 cups vegetable oil
  • 1 cup water
  • 1 half cup more brown sugar for coating

Directions

Step 1

Peel the saba bananas and slice each banana lengthwise into halves.

Step 2

Drain the canned jackfruit and cut into thin strips that are approximately 2 inches long.

Step 3

Set the spring roll wrappers on a clean, dry work surface.

Step 4

Take one wrapper and lay it flat, placing a banana half near one of the corners closest to you.

Add about 2-3 pieces of jackfruit strips on top of the banana within the wrapper.

Sprinkle approximately 1 tablespoon of brown sugar over the banana and jackfruit.

Fold the corner of the wrapper over the banana and jackfruit filling, rolling it tightly but gently.

Fold the sides over the filling and continue rolling until you have a neat log shape.
