Preheat your oven to 175°C (350°F).
In a large mixing bowl, combine ground pork, chopped carrots, bell pepper, onion, and minced garlic.
Add bread crumbs, raisins, and sweet pickle relish to the mixture.
Season the mixture with salt, black pepper, and soy sauce.
Crack the eggs into the bowl and mix all ingredients thoroughly with clean hands until well incorporated.
Lay out two sheets of aluminum foil, each approximately 30x30 cm.
Divide the meat mixture into two equal parts and place each portion onto the center of a foil sheet.
Flatten the meat mixture into a rectangle about 1 cm thick.
Place sliced hotdogs and quartered hard-boiled eggs lengthwise in the center of each flattened meat mixture.
Carefully roll the foil along with the meat mixture, ensuring the hotdogs and eggs are in the center.
Seal the embutido rolls tightly by folding the ends and sides of the foil, forming a cylinder-like shape.
Transfer the wrapped embutido rolls onto a baking sheet.
Bake in the preheated oven for 50-60 minutes, or until the pork is cooked through.
Once cooked, remove from the oven and allow to cool slightly before unwrapping.
Slice into 1.5 cm thick rounds before serving.
