Ingredients

  • 2 pieces Large eggs
  • 2 slices Sourdough or whole grain bread
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 whole Avocado
  • 0.5 teaspoons Lemon juice
  • 1 tablespoon Fresh parsley or chives (optional)

Directions

Step 1

Slice the avocado and remove the pit. Scoop out the flesh into a bowl, add lemon juice and mash well until it's smooth. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat.

Step 3

Crack the eggs into the skillet and season with salt and black pepper. Cook for about 3 minutes or until the whites are set but the yolk is still runny. Flip if you desire the eggs to be over-easy or cook a bit longer for a more set yolk.

While the eggs are cooking, preheat the oven broiler to low or medium setting. Place the bread slices on a baking sheet and brush each slice with the remaining olive oil.
