  • 1.5 cups Pitted dates
  • 1 cup Boiling water
  • 1 teaspoon Baking soda
  • 1.5 cups Whole wheat flour
  • 0.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.5 cup Dairy-free margarine
  • 1 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 2 Large eggs
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a 9-inch round cake pan.

Step 2

Place the pitted dates in a bowl and pour the boiling water over them. Stir in the baking soda and let the mixture sit for about 10 minutes to soften the dates.

Step 3

In a separate bowl, mix the dry ingredients: whole wheat flour, all-purpose flour, baking powder, salt, ground cinnamon, and ground nutmeg.

In a large mixing bowl, cream together the dairy-free margarine and brown sugar until light and fluffy, about 3 minutes.
