Ingredients

  • 2 cups pitted Medjool dates
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1.5 cups old-fashioned rolled oats
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup coconut oil, melted

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper.

Step 2

In a small saucepan, combine the pitted dates and water. Cook over medium heat, stirring occasionally, until the dates are soft and have absorbed most of the water, about 10 minutes.

Step 3

Once the dates are softened, remove the saucepan from the heat and add the vanilla extract. Use an immersion blender to puree the mixture until smooth. Set aside to cool slightly.

Step 4

In a large mixing bowl, combine the flour, oats, brown sugar, cinnamon, baking soda, and salt. Mix well to ensure the brown sugar is evenly distributed.

Pour the melted coconut oil into the dry mixture and stir until the mixture is crumbly and all the dry ingredients are moistened.

Press half of the oat mixture into the prepared baking dish to form an even layer, using the back of a spoon or your hands.

Spread the date mixture evenly over the oat layer.

Top with the remaining oat mixture, pressing down gently.

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.

Remove from the oven and allow to cool completely in the baking dish before cutting into bars.

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
