Ingredients

  • 200 grams All-purpose flour
  • 50 grams Icing sugar
  • 0.5 teaspoons Salt
  • 100 grams Coconut oil (solid)
  • 2 tablespoons Cold water
  • 400 ml Full-fat coconut milk
  • 3 tablespoons Cornstarch
  • 60 ml Maple syrup
  • 1 teaspoons Vanilla extract
  • 1 teaspoons Agar agar powder
  • 0.25 teaspoons Nutmeg (optional)

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

In a mixing bowl, combine the all-purpose flour, icing sugar, and salt. Add the solid coconut oil and rub it into the flour mixture using your fingertips until it resembles breadcrumbs.

Step 3

Add cold water, one tablespoon at a time, and mix until the dough forms a ball. Wrap the dough in cling film and refrigerate for 15 minutes.

Step 4

After chilling, roll out the dough on a lightly floured surface into a 0.5 cm (1/4 inch) thick round. Carefully transfer the dough into a 23cm (9-inch) tart tin, lightly pressing it into the sides and trimming excess dough.

Step 5

Prick the base of the dough with a fork, cover with parchment paper, and fill with baking beans. Bake blind in the preheated oven for 10 minutes. Remove the parchment and beans, and bake for another 5 minutes until lightly golden.

Step 6

While the tart shell is baking, prepare the filling. In a saucepan, whisk together coconut milk, cornstarch, maple syrup, and vanilla extract until smooth.

Step 7

Set the saucepan over medium heat and add agar agar powder. Bring to a gentle simmer, whisking continuously until the mixture thickens into a custard-like consistency, about 5-7 minutes.

Step 8

Remove the custard mixture from heat and allow it to cool slightly before pouring it into the baked tart shell.

Step 9

Allow the custard tart to cool at room temperature for 10 minutes, then refrigerate for at least 1 hour to set fully.
