Ingredients

  • 240 ml Unsweetened almond milk
  • 10 ml Apple cider vinegar
  • 250 g All-purpose flour
  • 10 g Baking powder
  • 3 g Baking soda
  • 1 g Salt
  • 150 g Cane sugar
  • 75 ml Coconut oil (melted)
  • 5 ml Vanilla extract
  • 100 g Brown sugar
  • 5 g Cinnamon
  • 60 g Dairy-free margarine or vegan butter
  • 75 g All-purpose flour (for crumble topping)

Directions

Step 1

Preheat the oven to 180°C (350°F). Grease a 20cm (8-inch) square baking pan and line the bottom with parchment paper.

Step 2

In a small bowl, combine the almond milk and apple cider vinegar. Stir and set aside to let it curdle, forming a buttermilk substitute.

Step 3

In a large mixing bowl, whisk together 250g of flour, baking powder, baking soda, and salt.

In another bowl, mix together the cane sugar, melted coconut oil, and vanilla extract. Add the curdled almond milk and mix well.

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
