Directions

Step 1

Peel the Russet potatoes and grate them using a box grater or food processor.

Place the grated potatoes in a large bowl and cover them with cold water. Swirl them around to remove excess starch, then drain them in a colander.

Place the grated potatoes on a clean kitchen towel or cheesecloth. Twist the cloth over a sink and squeeze out as much moisture as possible until the potatoes are dry.
