Ingredients

  • 240 ml water
  • 115 g dairy-free margarine
  • 15 g granulated sugar
  • 1 pinch salt
  • 125 g all-purpose flour
  • 4 large eggs
  • 480 ml unsweetened almond milk
  • 40 g cornstarch
  • 5 ml vanilla extract

Directions

Step 1

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, combine the water, dairy-free margarine, sugar, and salt. Bring to a boil over medium-high heat, stirring to melt the margarine.

Step 3

Once the mixture is boiling, remove from heat and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Return the pan to the stove on low heat, stirring for 1-2 minutes to dry out the dough.

Transfer the dough to a bowl and let cool for 5 minutes. Add eggs one at a time, beating well after each addition until the dough is smooth and glossy.

Spoon or pipe the dough into 1 1/2-inch rounds on the prepared baking sheet, spacing them about 2 inches apart.

While the puffs cool, prepare the pastry cream: In a medium saucepan, whisk together almond milk and cornstarch until smooth.
