Ingredients

  • 240 ml Unsweetened almond milk
  • 100 g Non-dairy margarine
  • 50 g Granulated sugar
  • 7 g Active dry yeast
  • 450 g All-purpose flour
  • 1 tsp Salt
  • 100 g Brown sugar
  • 2 tbsp Ground cinnamon
  • 1 tsp Vanilla extract
  • 120 g Powdered sugar
  • 1 tbsp Water

Directions

Step 1

In a small saucepan, heat the almond milk and 50g of non-dairy margarine over low heat. Stir until the margarine has melted. Let it cool until warm to the touch, about 40-45°C.

Step 2

Transfer the milk mixture to a large mixing bowl. Add the granulated sugar and sprinkle the yeast on top. Let the mixture sit for about 5-10 minutes until frothy.

Step 3

To the yeast mixture, add the vanilla extract and salt. Gradually add the flour, mixing with a spoon until a dough forms.

Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Place the kneaded dough into a lightly greased bowl, cover with plastic wrap, and let it rise in a warm area for about 1 hour or until doubled in size.

Meanwhile, prepare the filling. In a small bowl, combine the brown sugar and cinnamon. Melt the remaining 50g of margarine and set aside.

Once the dough has risen, roll it out on a floured surface into a large rectangle, approximately 30x40cm.

Brush the rolled-out dough with the melted margarine, then sprinkle the cinnamon-sugar mixture evenly over it.

Starting from the longer edge, carefully roll the dough into a tight log. Slice it into 12 equal pieces.

Place the rolls cut-side up in a greased baking pan. Cover the pan with a clean towel and let the rolls rise for another 20 minutes.

Preheat your oven to 180°C (356°F). Once risen, bake the rolls for 20-25 minutes or until lightly golden.

While the rolls are baking, prepare the icing. In a bowl, mix the powdered sugar with 1 tablespoon of water until smooth. Adjust the consistency by adding more water if needed.

Once baked, remove the rolls from the oven, let them cool for 10 minutes, then drizzle the icing over the warm rolls before serving.
