Ingredients

  • 2 heads Romaine lettuce
  • 1 loaf Day-old baguette
  • 6 tablespoons Olive oil
  • 4 cloves Garlic cloves, minced
  • 3 tablespoons Lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon Capers, drained
  • 3 tablespoons Nutritional yeast
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 tablespoons Unsweetened soy milk
  • 2 tablespoons Optional: Vegan parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

First, prepare the homemade croutons. Slice the day-old baguette into 1-inch cubes.

Step 3

In a mixing bowl, combine 4 tablespoons of olive oil and half of the minced garlic. Toss the bread cubes in the garlic oil until evenly coated.

Step 4

Spread the bread cubes on a baking sheet. Bake in the preheated oven for 10-15 minutes, or until golden and crispy. Stir halfway through to ensure even cooking.

Step 5

While the croutons are baking, prepare the dairy-free dressing. In a blender or food processor, combine the remaining garlic, lemon juice, Dijon mustard, Worcestershire sauce, capers, nutritional yeast, salt, black pepper, and soy milk. Blend well until smooth and creamy.

Step 6

Rinse and dry the Romaine lettuce. Tear into bite-sized pieces and place in a large salad bowl.

Step 7

Add the baked croutons to the lettuce.

Step 8

Drizzle the dairy-free dressing over the salad and toss gently to combine.

Step 9

For an optional finishing touch, sprinkle with vegan parmesan cheese.

Step 10

Serve immediately and enjoy your dairy-free classic Caesar salad!
