Ingredients

  • 250 grams All-purpose flour
  • 100 grams Coconut oil (solid state)
  • 60 ml Ice water
  • 200 grams Brown sugar
  • 120 ml Maple syrup
  • 15 grams Cornstarch
  • 1 pinch Salt
  • 60 ml Dairy-free milk (almond, soy, or oat)
  • 1 teaspoon Vanilla extract
  • 60 grams Raisins (optional)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large bowl, combine the all-purpose flour and a pinch of salt.

Step 3

Add solid coconut oil to the flour mixture. Using a pastry cutter or your fingers, incorporate the coconut oil until the mixture resembles coarse crumbs.

Step 4

Gradually add ice water, one tablespoon at a time, mixing until the dough begins to come together. Do not overmix.

Step 5

Form the dough into a disc, wrap in plastic wrap, and refrigerate for about 15 minutes.

Step 6

On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Use a round cutter to cut 12 circles to fit into a standard muffin tin.
