In a small saucepan, warm the almond milk over low heat until it's barely warm to the touch, about 100°F (38°C). Remove from heat.
Stir in olive oil and sugar into the warm almond milk. Sprinkle the yeast on top and let it sit until foamy, about 5-10 minutes.
In a large mixing bowl, combine 3 1/4 cups of flour and salt. Make a well in the center and pour in the yeast mixture.
Using a wooden spoon, stir the dough until it starts to come together, then transfer it to a lightly floured surface.
Knead the dough for about 7-10 minutes until it's smooth and elastic. If the dough is too sticky, gradually add the remaining 1/4 cup of flour as needed.
Lightly grease a large bowl with vegetable oil. Place the dough in the bowl, turning to coat with oil. Cover with a clean kitchen towel and let it rise in a warm, draft-free place until doubled in size, about 1 to 1.5 hours.
Punch down the dough to release the air. Turn it out onto a lightly floured surface and divide it into 12 equal pieces.
Shape each piece into a ball and place them in a greased 9x13 inch baking pan, evenly spaced apart.
Cover the rolls with a towel and let them rise again until doubled in size, about 30 minutes.
Preheat the oven to 375°F (190°C).
Brush the tops of the rolls with aquafaba for a golden finish.
Bake in the preheated oven for 20-25 minutes or until the tops are lightly golden brown.
