Ingredients

  • 4 tablespoons Dairy-free butter
  • 2 tablespoons Olive oil
  • 3 pieces Garlic cloves, minced
  • 12 ounces Dried spaghetti or other pasta
  • 1 cup Vegetable broth
  • 2 tablespoons Nutritional yeast
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

Bring a large pot of salted water to a boil over high heat.

Step 2

Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 3

In a large skillet over medium heat, add olive oil and 2 tablespoons of dairy-free butter.

Step 4

Once the butter has melted, add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 5

Add the vegetable broth and let it simmer for about 3 minutes to slightly reduce.
