Ingredients

  • 400 ml coconut milk
  • 150 grams coconut sugar
  • 50 grams cocoa powder
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 100 grams dairy-free chocolate sprinkles or shredded coconut for coating

Directions

Step 1

In a medium saucepan, combine the coconut milk, coconut sugar, and cocoa powder.

Step 2

Place the saucepan over medium heat and stir the mixture continuously with a wooden spoon to avoid clumping and burning.

Step 3

Once the mixture starts to boil, reduce the heat to low, and continue stirring. The mixture should begin to thicken after about 10-15 minutes.

Step 4

Continue cooking and stirring until the mixture becomes thick enough to reveal the bottom of the pan when you scrape the spoon across it. This should take about 20 minutes.

Step 5

Remove the pan from the heat and stir in the coconut oil, vanilla extract, and a pinch of salt.

Step 6

Transfer the mixture to a plate or shallow dish to cool at room temperature for about 1 hour, or until it's firm enough to handle.

Step 7

Once cooled, butter your palms lightly with some coconut oil to prevent sticking, and take a small amount of the brigadeiro mixture, about the size of a teaspoon.

Step 8

Roll the mixture into small balls using your hands.

Step 9

Roll each ball in dairy-free chocolate sprinkles or shredded coconut to coat.

Step 10

Place the coated brigadeiros onto a tray lined with parchment paper.

Step 11

Chill the brigadeiros in the refrigerator for at least 30 minutes before serving.
