Ingredients

  • 4 pieces large tortilla wraps
  • 8 slices thick-cut bacon
  • 8 leaves fresh lettuce leaves
  • 2 pieces medium tomato
  • 1 pieces avocado
  • 0.5 cup dairy-free mayonnaise
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat a frying pan over medium heat. Add the bacon slices and cook them for 5-7 minutes on each side, or until crispy. Remove the bacon and place on a paper towel-lined plate to drain excess fat.

Step 2

While the bacon is cooking, prepare the vegetables. Rinse the lettuce leaves and pat them dry. Slice the tomatoes thinly. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth.

Step 3

In a small bowl, mix the mashed avocado with lemon juice, salt, and black pepper to taste. Stir well to combine.

Step 4

Lay a tortilla wrap flat on a clean surface. Spread about 2 tablespoons of dairy-free mayonnaise evenly over the tortilla, leaving a margin around the edge.

Step 5

Layer 2 lettuce leaves, lengthwise, in the center of the tortilla.

Step 6

Place 2 slices of cooked bacon on top of the lettuce.

Step 7

Add a few slices of tomato over the bacon, followed by a generous spoonful of the avocado mixture.

Step 8

Carefully fold in the sides of the tortilla, then roll it up tightly from the bottom to the top, forming a wrap.

Step 9

Repeat the assembly steps for the remaining wraps.

Step 10

Serve immediately or wrap them in foil or parchment paper for taking on-the-go.
