Ingredients

  • 500 grams All-purpose flour
  • 10 grams Instant yeast
  • 50 grams Granulated sugar
  • 5 grams Salt
  • 1 teaspoon Vanilla extract
  • 50 grams Unsweetened applesauce
  • 250 milliliters Soy milk
  • 50 milliliters Vegetable oil
  • 200 grams Favorite jam or jelly
  • 50 grams Powdered sugar
  • 1000 milliliters Oil for frying

Directions

Step 1

In a large mixing bowl, combine the flour and instant yeast.

Step 2

In a separate bowl, mix sugar, salt, vanilla extract, and applesauce until well blended.

Step 3

Warm the soy milk slightly and add it to the applesauce mixture, stirring to combine.

Step 4

Gradually pour the wet mixture into the flour and yeast mixture, stirring with a wooden spoon until a rough dough forms.

Step 5

Add in the vegetable oil and knead the dough on a lightly floured surface for about 8-10 minutes, until it becomes smooth and elastic.

Step 6

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for approximately 1 hour or until doubled in size.

Step 7

Punch down the risen dough and roll it out on a floured surface to about 1 cm thickness.

Step 8

Use a round cutter to cut out circles around 7 cm in diameter; re-roll the scraps to cut more pieces.

Step 9

Place the dough circles on a floured tray, cover with a cloth, and let them rise again for about 30 minutes.

Step 10

Heat oil in a deep fryer or heavy pot to 170°C (340°F).

Step 11

Carefully fry the dough circles in batches, approximately 2-3 minutes per side, until golden brown.

Step 12

Remove the fryers with a slotted spoon and drain on paper towels.

Step 13

Once slightly cooled, use a filling nozzle to inject each Berliner with about 1-2 teaspoons of your favorite jam.

Step 14

Sprinkle the powdered sugar generously over the tops of the filled Berliners.

Step 15

Serve warm and enjoy your homemade dairy-free Berliners!
