  • 1 large Onion, finely chopped
  • 3 Garlic cloves, minced
  • 1 pound Ground beef
  • 28 ounces Canned crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 cups Dairy-free ricotta cheese
  • 0.25 cup Fresh parsley, chopped
  • 1 equivalent Dairy-free egg substitute
  • 9 Lasagna noodles
  • 2 cups Dairy-free mozzarella cheese, shredded

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat the olive oil over medium heat.

Step 3

Add the onion and garlic, cooking until softened, about 5 minutes.

Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 8-10 minutes.

Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and black pepper. Bring to a simmer and reduce the heat to low. Let it cook for about 20 minutes, stirring occasionally.

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

Then remove the foil and bake for another 10-15 minutes, or until the cheese is melted and bubbly.

Let the lasagna rest for 10 minutes before slicing and serving.
