Ingredients

  • 4 tablespoons Olive oil
  • 4 tablespoons All-purpose flour
  • 3 cups Unsweetened almond milk
  • 2 tablespoons Nutritional yeast
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground white pepper
  • 0.25 teaspoons Ground nutmeg

Directions

Step 1

In a medium-sized saucepan, heat the olive oil over medium heat until shimmering.

Step 2

Add the all-purpose flour to the saucepan. Stir constantly with a wooden spoon or a whisk to form a smooth paste. Cook this roux for about 2-3 minutes, ensuring it does not brown.

Step 3

Gradually pour in the unsweetened almond milk, starting with a slow trickle to incorporate it smoothly into the roux. Stir continually to prevent lumps from forming.

Step 4

Once all the almond milk has been added, switch to using a whisk and continue to stir the mixture over medium heat.

Step 5

Bring the sauce to a gentle simmer, and keep stirring for about 8-10 minutes until the sauce thickens and coats the back of a spoon.

Step 6

Add nutritional yeast, salt, ground white pepper, and ground nutmeg into the sauce. Stir well to combine the flavors.

Step 7

Continue to cook the sauce for another 2-3 minutes, allowing the flavors to meld together. Adjust seasoning to taste if needed.

Step 8

Remove the saucepan from heat and serve the dairy-free bechamel sauce hot over your desired dish.
