Ingredients

  • 16 ounces Dairy-free pasta
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 cup Raw cashews
  • 2 cups Unsweetened almond milk
  • 1 cup Nutritional yeast
  • 2 tablespoons Lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 cup Panko breadcrumbs
  • 2 tablespoons Dairy-free butter

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Cook the dairy-free pasta according to package instructions until al dente. Drain and set aside.

Step 3

In a medium skillet over medium heat, warm the olive oil. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for another 1-2 minutes until fragrant.

Step 4

In a blender or food processor, combine the raw cashews, sautéed onion and garlic, almond milk, nutritional yeast, lemon juice, Dijon mustard, paprika, salt, and ground black pepper. Blend until smooth and creamy.

Step 5

In a large mixing bowl, combine the cooked pasta with the creamy sauce mixture. Mix thoroughly to ensure the sauce evenly coats the pasta.

Step 6

Transfer the pasta mixture to a lightly greased 9x13 inch baking dish.

Step 7

In a small bowl, melt the dairy-free butter and combine it with the panko breadcrumbs.

Step 8

Sprinkle the breadcrumb mixture evenly over the top of the pasta.

Step 9

Bake in the preheated oven for about 20-25 minutes, or until the top is golden brown and crispy.

Step 10

Allow the baked mac and cheese to cool for a few minutes before serving. Enjoy your delicious dairy-free meal!
