Ingredients

  • 2 slices Dairy-free bread
  • 1 tablespoon Dairy-free butter or margarine
  • 1 cup Dairy-free shredded cheese
  • 4 slices Bacon
  • 2 Large eggs
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 tablespoon Vegetable or olive oil

Directions

Step 1

Heat a skillet over medium heat and cook the bacon slices until crispy, about 4-5 minutes per side. Remove bacon and set aside on a paper towel to drain excess fat.

Step 2

In the same skillet, reduce heat to medium-low and wipe out most of the bacon fat, leaving about a teaspoon for flavor.

Step 3

Crack eggs into a bowl, add salt and pepper, and beat until well combined.

Step 4

Add vegetable or olive oil to the skillet, then pour in the eggs. Allow eggs to set slightly before gently stirring and cooking until scrambled and just cooked through. Remove from heat.

While the eggs are cooking, spread dairy-free butter on one side of each slice of bread.

Assemble the sandwiches by layering scrambled eggs, cooked bacon, and a generous sprinkle of dairy-free cheese on the unbuttered side of one slice of bread. Top with another slice of bread, butter side out.

Carefully flip the sandwich with a spatula and cook the other side until golden brown and the dairy-free cheese has melted, another 3-4 minutes.

Remove from skillet, cut in half if desired, and serve hot.
