Ingredients

  • 12 oz Fettuccine pasta
  • 2 tbsp Olive oil
  • 3 large Garlic cloves, minced
  • 2 cups Unsweetened almond milk
  • 0.25 cup Nutritional yeast
  • 2 tbsp Cornstarch
  • 1 tbsp Lemon juice
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 0.125 tsp Nutmeg
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.

Step 3

In a medium bowl, whisk together the unsweetened almond milk and cornstarch until fully combined and smooth.

Step 4

Pour the almond milk mixture into the skillet with the garlic. Stir continuously and bring the sauce to a simmer, allowing it to thicken, which should take about 3-4 minutes.

Step 5

Stir in the nutritional yeast, lemon juice, salt, pepper, and nutmeg into the thickened sauce. Add the reserved pasta water to achieve your desired sauce consistency.

Step 6

Add the cooked fettuccine to the skillet and toss to coat the pasta evenly with the sauce.

Step 7

Continue cooking for another 1-2 minutes, until the pasta is heated through and fully coated.

Step 8

Remove from heat, garnish with freshly chopped parsley, and serve immediately.
