Ingredients

  • 200 grams Tapioca flour
  • 50 grams All-purpose flour
  • 1 teaspoon Salt
  • 2 cloves Garlic, minced
  • 2 stalks Scallions, chopped
  • 200 milliliters Boiling water
  • 500 milliliters Vegetable oil
  • 0.5 teaspoon White pepper

Directions

Step 1

In a mixing bowl, combine the tapioca flour, all-purpose flour, salt, minced garlic, chopped scallions, and white pepper.

Step 2

Gradually add the boiling water into the flour mixture while stirring continuously with a spatula or wooden spoon.

Step 3

Mix until the dough forms and is cool enough to handle. The dough should be slightly sticky but manageable.

Step 4

Lightly dust your hands with tapioca flour and shape the dough into small, flat discs about 5 centimeters in diameter.

Step 5

In a deep pan or wok, heat the vegetable oil to 180°C (356°F) over medium heat.

Step 6

Once the oil is hot, carefully add the tapioca discs in batches, being sure not to overcrowd the pan.

Step 7

Fry the cireng for about 3-4 minutes on each side, or until they are golden brown and crispy.

Step 8

Remove the fritters using a slotted spoon and drain them on a plate lined with paper towels to remove excess oil.

Step 9

Repeat the frying process with the remaining dough.

Step 10

Serve the cireng warm with your choice of dipping sauce such as chili sauce or sweet soy sauce.
