Ingredients

  • 240 ml unsweetened almond milk
  • 57 g coconut oil
  • 50 g granulated sugar
  • 7 g active dry yeast
  • 375 g all-purpose flour
  • 1 tsp salt
  • 100 g brown sugar
  • 2 tbsp ground cinnamon
  • 50 g vegan butter
  • 100 g vegan cream cheese
  • 120 g powdered sugar
  • 1 tsp vanilla extract

Directions

Step 1

In a small saucepan, heat the almond milk and coconut oil over low heat until the coconut oil melts completely. Be careful not to allow it to boil. Set aside to cool until warm to the touch.

Step 2

Pour the warmed milk mixture into a large bowl. Add the granulated sugar and active dry yeast and stir to combine. Let it sit for about 10 minutes until it becomes foamy.

Step 3

Add the flour and salt to the yeast mixture. Mix with a wooden spoon or spatula until a dough begins to form.

Step 4

Knead the dough by hand on a lightly floured surface for about 5-7 minutes, until smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment.

Step 5

Transfer the dough to a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm spot for about 1 hour or until doubled in size.

Step 6

While the dough is rising, prepare the filling. In a small bowl, combine the brown sugar and ground cinnamon.

Step 7

Once the dough has doubled in size, punch it down and transfer it to a floured surface. Roll it out into a rectangle approximately 30x23 cm.

Step 8

Spread the vegan butter over the rolled-out dough, leaving a small border around the edges.

Step 9

Sprinkle the cinnamon sugar mixture evenly over the buttered dough.

Step 10

Starting at one of the short ends, tightly roll up the dough into a log. Use a sharp knife to cut it into 12 equal pieces.

Step 11

Place the rolls, cut side down, into a greased 9x13 inch baking pan, spacing them slightly apart.

Step 12

Cover the pan with a towel and let the rolls rise in a warm place for another 30 minutes.

Step 13

Preheat your oven to 180°C (350°F).

Step 14

Bake the cinnamon rolls for 20-25 minutes, or until lightly golden brown.

Step 15

While the rolls are baking, prepare the frosting. In a bowl, beat together the vegan cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

Step 16

Once the cinnamon rolls are done, remove them from the oven and let them cool slightly. Spread the frosting generously over the warm rolls.

Step 17

Serve warm and enjoy your dairy-free cinnamon rolls with vegan cream cheese frosting!
