Ingredients

  • 4 large apples (such as Honeycrisp or Granny Smith)
  • 0.25 cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 0.25 cup raisins (optional)
  • 0.25 cup chopped nuts (such as walnuts or pecans, optional)
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Core the apples while leaving the bottom intact to create a vessel for the filling. Peel a bit of the top skin if desired.

Step 3

In a small bowl, mix together the maple syrup, ground cinnamon, ground nutmeg, vanilla extract, and lemon juice.

Step 4

Place the apples in a baking dish and stuff them with the mixture of maple syrup seasoning. Add raisins and nuts if using.

Step 5

Pour the water into the bottom of the baking dish to prevent sticking and to create a steaming effect during baking.

Step 6

Cover the dish loosely with foil and bake for 30 minutes.

Step 7

Remove the foil and bake for an additional 15 minutes or until the apples are tender.

Step 8

Allow the apples to cool slightly before serving them warm. They can be served as is or with a dollop of dairy-free yogurt or ice cream.
